A great soup for this chilly weather, this sweet potato and red lentils soup, is filling, healthy, and budget-friendly. Basically a full meal, brings lots of fibers, vegetable proteins, vitamin A, some vitamins B, and minerals.
Sweet potatoes are good for eyesight and have anti-inflammatory benefits, so important for the winter when we are most likely to catch colds and flu. The proteins in of the lentils make it more satiating and will help you keep blood sugar levels more stable and keep hunger away.
Cooking tips
The soup is really easy to make. Only sweet the onion, then add the lentils { make sure that they are rinsed before you put them in the pan } and the potato roughly chopped. It really takes only 5 min to prepare this soup, and it really easy to make, so a failproof recipe if you are tired or have little time
You don’t need a blender
I did not use a blender, but a potato masher for this soup. You can obviously use a blender, but only for a few seconds to leave that rough look.

Substitutions
This recipe works really well with pumpkin or butternut squash as well. You can add some ginger if you like it, or spices like sumac or sweet paprika.
How to save time in the kitchen
The measurements below are for 2 people, but you can double up the doses, and keep a cooked portion of soup for the following day or to store in the freezer. This way, you will cook less and have some healthy ready-made food available.
How to make this sweet potato and red lentil soup
Ingredients

- 1 Red onion
- 2 Sweet potato medium
- 1/2 cup Red lentils
- 2 tbsp Extra-virgin Olive Oil
- 1/2 tsp Turmeric
- A dash chili (optional)
- A dash Rosmary dried
- A dash Black pepper
- 1 Kalo stock cube
Instructions
- Sweat the onion in a pot with the olive oil chili and a dash of thyme, then when ready add the rinsed lentils and peeled and chopped up sweet potatoes.
- Add the stock cube and water, the tomato puree, the turmeric, and more thyme, bring it to boil and let it simmer for 2O-25 min.
- Use a potato masher to roughly mash the potatoes and let it simmer for 3-4 min more. Serve!
