Easy red lentil soup

What I like is really easy, delicious and quick to make healthy food. I like the sensation of feeling nourished but also light and full of energy that comes with healthy meals, but I don’t like much of the fuss of complicated and long recipes and endless shopping list.

This soup is made with store cupboard ingredients

If you are like me, then you would love this super easy red lentil soup recipe that I made the other day with all the ingredients that I had in my dry store cupboard. It really doesn’t get easier than this.

What I like about this soup is that on top of being easy and delicious is is rich in proteins and quite low in carbs but at the same time makes you feel really full for a long time.

If you work from home you can easily make this soup, in the morning for example, to have a nice and healthy lunch or for a light and comforting meal, ideal if you have indulged a bit.

What you need for this Easy Red Lentil Soup

serves 1 | time 35 min

  • 1/2 brown onion
  • 1/3 cup of split red lentils
  • 2 tbsp of extra-virgin olive oil
  • 1 and half tsp of tomato paste
  • 1/2 Kalo organic stock cube
  • A dash of black, red & green pepper
  • A dash of mixed herbs ( oregano, thyme, rosmary)
  • A dash of turmeric (optional)
  • Sea salt to taste

How to make this Easy Lentil Soup

Peel and cut the onion and let in sweat in the soup pot for a few minutes, making sure that it does not brown.

Place the lentils in a strainer and rinse them, then pour them in the post, adding 2 big glass of water, the tomato paste, the crumbled stock cube and the herbs.

Bring it to boil, then lower the heat and let it simmer for 20-25 min, and the soup is done! To serve you can add a sprinkle of raw extra-virgin olive oil and a dash of few chili pepper flakes. Enjoy!
