Quick polenta with walnuts & Parmesan cheese

This polenta with walnuts and Parmesan cheese recipe is the perfect quick meal for when you want something comforting but don’t feel like cooking.

It is ready in literally 5 minutes, it’s delicious and gluten-free. Polenta is a traditional dish from the Northern Italy, made from corn flour. It is constituted mainly by carbs, so it is traditionally combined with meat, cheese, or vegetable sauces or as an accompaniment to other dishes.

This Polenta is quick to make

Traditional polenta takes is quite elaborate to make, and its cooking takes almost an hour and requires constant attention and stirring to avoid the formation of lumps.

But this Polenta Valsugana, it’s basically pre-cooked and takes only a few minutes to get ready, making it the perfect meal for when you need something comforting, quick, and most of all gluten-free. In UK, you can buy it on Ocado.

Nutritional info

Nutritionally speaking, polenta contains mostly carbohydrates and only 2 grams of proteins for 100gr, and has a higher glycemic index than pasta or brown rice.

This is the reason why I have added 30g of Parmesan cheese and some walnuts to this recipe. Parmesan cheese makes this dish yummy and comforting, and it add roughly 9 gr of proteins, plus calcium. The combination of Parmesan cheese, walnuts, and a sprinkle of extra-virgin olive oil, will slow down the absorption of carbs from the polenta.

What you need for this polenta with walnuts and Parmesan

serve 1 | time 5 min

  • 50 gr polenta Valsugana
  • 30 gr Parmesan or Grana Padano cheese
  • 3-5 walnuts
  • A sprinkle of extra-virgin olive oil
  • A dash of nutmeg
  • Black pepper

Method

  • Cook the polenta according to the packet instructions, as they may change according to the brand you use, making sure that you stir the polenta continuously for 3 min, to avoid lumps.
  • When ready, pour into a serving plate, add a tiny bit of olive oil, cracked pepper, a touch of freshly grated nutmeg, freshly grated Parmesan and crushed walnuts.
  • Serve and enjoy!
