This chicken salad is ready in no time and it is really delicious. I have named it ” My Waitrose Chicken Salad” because I use Waitrose’s sweet potato falafel to give it a bit of flavor.

Yes, I know they are ready-made, but this salad will bring lots of good nutrients, like lean proteins, phytonutrients, vitamins and minerals, that a couple ready-made falafel are a good compromise!


You can use left-over rotisserie chicken
The idea is to create an easy, quick and tasty salad, to offer a more protein-rich and lower carbs option. If you are in a hurry and have no time to cook, you can also use some leftover Rotisserie chicken from Waitrose or M&S.
What to use if you don’t have sweet potato falafel
If you don’t have the time to get the sweet potato falafel from Waitrose, can use microwaved sweet potatoes.
How to cook the sweet potatoes in the microwave
The quickest way to cook sweet potatoes is to microwave them with the skin on for 3-4 minutes depending on the size of the potato. Make a little incision through the skin.
Let them cool off a couple of minutes, they will keep on cooking while they are still hot. When ready serve them with a little of healthy fat like extra-virgin olive oil or grass-fed butter.
The carotenoids ( Vitamin A precursor) presents in sweet potatoes are lipo-soluble which means that they need fats to be better absorbed.

- 3 Chicken fillets Cooked
- 40 g Arugula
- 2 leaves Red Radicchio
- few slices Cucumber
- few Pomegranate seeds
- few Pumpkin seeds
- 2 Sweet potato falafel crumbled
- 2 tsp Extra-Virgin Olive Oil
- a dash Lemon juice
- a dash Reduced Balsamic vinegar organic
Instructions
Simply assemble all the ingredients together, season with EVOO, lemon juice and balsamic glaze and eat!
