Ingredients
- 1-2 Smoked mackerel fillet
- 4 cocktails tomatoes
- 1/2 bag of rocket leaves
- 2-3 celery stalks
- 6 black pitted olives
- a generous pinch of oregano
- A sprinkle of Extra-virgin olive oil
- A dash of reduces balsamic vinegar
Instructions
- Place the vegetables in a salad bowl, with the rocket roughly cut, and the celery finely sliced.
- Season with the oregano, olive oil and a dash of balsamic, toss, add the mackerel fillets without the skin and serve.
