This fennel radicchio and clementine salad is delicate and delicious. A great and authentic Italian salad for gourmet food lovers that is also healthy and supports liver and gut health.
This salad is made by mixing two types of radicchio: “radicchio di Chioggia” which is a round shape, red-purple type of salad, and “radicchio variagato di Castelfranco” which looks like a light, yellowish type of salad with few small purple spots. They both are named after the place they originated from in Italy. You can easily find “radicchio di Chioggia” in the UK, in Wholefoods, and in local vegetable market stalls, as it is easily grown in Kent. The lighter one, can be found in specialty shops like Natoora.
Benefits of radicchio
The main benefit of radicchio is in supporting the liver in its detoxification pathways and aiding digestion. The red pigment is rich in antioxidants and anti-inflammatory.
Benefits of fennel
Fennel is a low calories vegetable, rich in fibre but gentle on your gut. It is also rich in a vast array of phytonutrients, and traces of minerals and vitamins.
This salad is great with no salt, and just a little sprinkle of extra-virgin olive oil, making it a great choice for those on a low sodium diet.
The sweetness of the clementine perfectly complement the bitterness of the red radicchio, creating the perfect balance of flavours and texture.
