Buckwheat is a healthier option than traditional white flour as it is less refined, and despite its name is not a grain and it is gluten-free. It is quite nutritious and has a good aminoacids profile, good for vegetarians and vegans.

Low in sugar

These pancakes are also low-sugar as they take their sweetness from the banana rather than added sugar or sweetener. They are a great choice for those with a sweet tooth or that are easily addicted to sugar because they don’t spike up your blood sugar levels.

Banana milk, is a perfect substitute for almond milk, keeping the pancakes nuts-free and environmentally friendly, minimizing food waste.

How to make these gluten-free chocolate pancakes

Ingredients

  • 2 Eggs
  • 3 tbsp Buckwheat flour
  • 3 tsp Cacao powder
  • 2 Banana, ripe, small
  • A Dash Cinnamon
  • A Dash Sodium Bicarbonate
  • A Dash Coconut oil, raw
  • Maple syrup

Instructions

  1. Beat the eggs, then pour the flour and chocolate powder in the mix.
  2. Blend the bananas with a bit of water, until you have a creamy consistency and pour into the mix. Add some water if needed to reach desired consistency. Sprinkle a dash of sodium bicarbonate
  3. Pour the mix into a non-stick pan with a tiny bit of coconut oil.
  4. When ready, serve a drizzle of maple syrup and some strawberries. Enjoy!
